Ingredients

  • 1 10-ounce can Rotel tomatoes with green chilies, undrained
  • 1 16-ounce box Velveeta cheese cubed for faster melting
  • Optional toppings jalapeños, fresh cilantro, crispy bacon bits, sour cream, or diced red onion

Instructions

  • Brown the Beef: In a large skillet over medium-high heat, add the ground beef and cook for 5-7 minutes, breaking it apart as it cooks, until no pink remains.
  • Drain Excess Fat: If needed, carefully drain any excess fat from the skillet, leaving about 1 tablespoon for flavor.
  • Add Rotel: Pour the entire can of Rotel tomatoes (with juice) into the skillet with the cooked beef and stir to combine evenly.
  • Add the Cheese: Reduce heat to medium-low and add the cubed Velveeta cheese to the skillet.
  • Melt Thoroughly: Stir constantly for 5-8 minutes until the cheese is completely melted and the mixture is smooth and creamy.
  • Transfer and Serve: Pour the dip into a serving bowl or keep it warm in a slow cooker on low heat, and top with your choice of garnishes.
  • Serve Immediately: Surround the dip with tortilla chips, crackers, or fresh vegetables for dipping.
