  • 32 ounces canned refried beans 2 16-ounce cans, such as Old El Paso
  • 3 tablespoons water to thin the bean layer
  • 1.5 cups premade mild guacamole or mash your own from 2-3 avocados
  • 2 cups sour cream to be mixed with taco seasoning
  • 1 ounce packet mild taco seasoning such as Great Value brand
  • 16 ounces chunky mild salsa such as Pace brand, drained through a mesh strainer
  • 2 cups shredded lettuce iceberg or romaine
  • 2 cups pre-shredded fiesta blend cheese such as Great Value brand
  • 2.25 ounces sliced black olives such as Mario brand, well drained
  • 1 cup chopped roma tomatoes seeds removed for less watery dip
  • 0.5 cup thinly sliced green onions white and light green parts

Instructions

  • Mix the beans: In a small bowl, combine the canned refried beans with 3 tablespoons of water and stir until smooth and spreadable, about 1-2 minutes.
  • Spread evenly: Transfer the bean mixture to the bottom of a 9x13 inch baking dish or large platter, creating an even layer using a spatula.
  • Mix the topping: In a small bowl, combine 2 cups of sour cream with the entire 1 ounce packet of mild taco seasoning, stirring until fully blended and evenly seasoned, about 1-2 minutes.
  • Spread smoothly: Spread the seasoned sour cream evenly over the bean layer, making sure to cover all edges and create a smooth, even surface.
  • Layer the guacamole: Spread the 1.5 cups of premade mild guacamole evenly over the sour cream layer, working gently to avoid mixing the layers.
